All these kind of palm sugars originally made of nira, a white sap obtained by tapping the inflorescences of the palm trees. To turn it into sugar, the nira is first strained to remove dirt, then boiled until it becomes syrupy. It is then poured into a mold, usually made from half the husk of a coconut or cube of bamboo, makes it looked like cube of battery, and then left to harden. After it is removed from the mold, the palm sugar is ready for traditional use, we called it ’solid palm sugar’ in english, in bahasa Indonesia it well-known as ‘gula merah’.

In making granulated palm sugar, however, is much longer and complicated then the solid one. The boiled nira is not simply poured into a mold. Instead, it is stirred and strained and dried so that it forms granules. This kind of sugars that we are focusing to sell al over the world.
